Before I started living abroad, I took bagels for granted. In New Zealand and Ecuador I could find edible ones. This is NOT the case in the UK. The New York Bakery Co. bagels they sell in the grocery store are not good. They are skinny and wimpy and the Brits gobble them up (they have no idea what a true bagel tastes like). What I wouldn't do to have New York Bagel & Baily Corp in Leeds instead of Skokie!! Even a dunkin' donuts bagel or sarah lee bagel available! After eating the icky UK ones a few times, I decided it would be worthwhile to try making my own. Bagels are notorious for being super challenging to make. I also don't have the best track record for baking with yeast, but I was desperate!! I used this recipe I found on pinterest. It seems the thing people find daunting about making bagels is the boiling part. I didn't actually think it was that bad. I've made them twice now and one trick to it is not to put to many in the water at once and to boil plenty of water. Here are my first attempts!
