Cookies! In a mug??

Recently I've become a big fan of the mug cake!  I wish I could have the fancy peanut butter or nutella ones I've seen but due to my nut allergies, so I've been limited to a nice little chocolate one! My life has been changed by the mug cookie!! I make these at night when I'm craving something sweet, but don't having anything! I also tell myself that it's good for my portion control, but when it comes to procrastination, sometimes making several in one day takes up more time than making an entire cake!

Here's the process from no. 2 pencil:
"Chocolate Chip Cookie in a Cup
created by Melissa at No. 2 Pencil
1 Tablespoon Butter1 Tablespoon Granulated White Sugar1 Tablespoon of firmly packed Dark Brown Sugar3 Drops of Vanilla ExtractSmall Pinch of Kosher Salt1 Egg Yolk (discard the egg white)Scant 1/4 of All Purpose Flour2 Tablespoons of Semi Sweet Chocolate Chips
Start by melting your butter in the microwave. Add sugars, vanilla and salt. Stir to combine. Separate your egg and add the yolk only to your cup. Stir to combine. Add flour, then stir again. Add the chocolate chips, and give a final stir. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds."

I had to experiment with cooking times because our crazy microwave has a dial and not a digital display where you can select a time.  Do not over cook this. It will end up hard as a rock! You also might want to rub some butter or sprays some oil in the mug because these do tend to stick!

Sweet treat with a nice espresso!
