Taquitos withdrawal...

One thing I truly missed while living in England was taquitos. I know this is ridiculous and I really shouldn't eat them with all their preservatives and blah blah blah, but I love them. They're so spicy and cheesy and delicious and mostly easy. I hunted down The Girl Who Ate Everything's recipe and couldn't resist making them immediately ( I was also SERIOUSLY procrastinating and this was way more fun than thesis research).  Plus they're seriously easy to make! 

The TGWAE recipe is: 
⅓ cup (3 oz.) cream cheese, softened 
¼ cup green salsa (I used red. Green wasn't anywhere to be found in England)
1 tbsp. fresh lime juice, plus more to taste 
½ tsp. cumin ½ tsp. chili powder
 ¼ tsp. garlic powder 
3 tbsp. chopped cilantro, plus more to taste (I omitted cilantro- It grosses me out)
2 green onions, sliced (I used a few more)
2 cups cooked chicken, shredded
1 cup shredded cheese (I used one cup of taco blend I found)~12 small corn or flour tortillas 

Ok here's how: 
First I poached two chicken breasts. I wasn't sure how great this was going to work at first but I knew frying wasn't going to give me the texture I wanted. Once those guys were cooked, I fished them out of the boiling water and shredded them with a fork and my fingers. Then I added the softened cream cheese and salsa to the mix. Once everything was well coated, I added all of the spices. Then add the green onions and cilantro (if you'd like). 

 Now it's time to fill. I microwaved my shells for a few seconds to get them a bit soft and easier to work with. I tried to fill to a level where I could make a full 12 taquitos from this recipe. It probably worked out to a little more than two tablespoons. I think the fill amount was pretty obvious. Once filled place seam down on a parchment lined baking sheet. I baked 6 right away (at 425f) and flash froze the other six. 


They cooked for about 10 minutes and were GLORIOUS!!
