Chocolate fruit cups {gluten free/ vegan/ nut free}


Have you ever been to a godiva store? They are such a treat! The cases of truffles and confectionary goodness (however mass produced it may be) are truly addicting.  A trip there can turn out to be excruciatingly expensive. Yes for two pieces you get two lovely bits of chocolate you (well me anyway) could never be able to reproduce in your own kitchen.  Beyond their treats that are brought in, they have a little station where they make fresh treats. Including these amazing little chocolate cups filled with fresh fruit. Sadly, as well as being about four or five bucks a pop, there's the ever present fear of cross contamination (Godiva isn't always allergy safe...), this special treat isn't really an option any more.  Somehow I've started thinking about these pretty much NONSTOP for the past few days and I just had to take a stab at making them on my own. They ended in a very satisfying result! 


Here's what you need:

-Chocolate of your choice (I used 1/4th of the dark pound plus bar from TJs)
-Fresh berries (I used blueberries (1/2 clamshell) and raspberries (1 whole clamshell)) 
-Cupcake liners or a silicon or plastic candy mold
THAT'S IT!!!

{this can be scaled up or down depending on the amount of cups you'd like to make!}

Melt your chocolate in the microwave or double boiler. Keep an eye on it and stir until smooth. 


If you brave a double boiler, make sure you watch out for steam!


Give your fruit a rinse. Eat a few pieces. 


When the chocolate is melted, spoon into cupcake liners. If you have a silicon muffin tin or some sort of  chocolate mold those would eliminate the cupcake liner. The godiva cups have a pretty thick base of chocolate so I used about two regular sized teaspoons and then spread it up onto the sides of the liner with the spoon. This take a bit of practice but it's chocolate and you really can't mess it up. 


Chill these for about 10 minutes for the chocolate to set. Then fill with the berries!! 


You may have to reheat your chocolate a bit for this next part.. Drizzle melted chocolate over the berries. Chill again.
