Dutch babies!

I randomly strike up conversations with people in random places, like the check out line. The other day, this had some tasty results. I think maybe I was talking about crepe when a woman asked me if I'd ever made dutch babies. My first thought was I've never produced a child of dutch origin with my body, if that's what you mean.. She laughed and said "no, to eat."  "I'm not going to eat a small child with wooden shoes!!" This followed a descriptive explanation about a wonderful little pastry called a dutch baby; a sort of crepe, pancake, flour/egg/sugar thing. I must have still looked really confused because she made me promise to look it up and try it.  So here we are. Trying dutch babies and trying not to picture small children in wooden shoes.

There are a wide range of recipes for these guys, but for my first try, I used Martha Stewart's.
Here's what you need: 
-3 large eggs
-3/4 cup milk
-1/2 cup flour
-1/4 tsp salt
-1/2 tsp vanilla extract
-1/4 cup sugar + 1 tbsp
-3 tbsp butter
-1 tbsp lemon (I omitted this)


Melt the butter in a cast iron pan or other oven proof dish.

Put all ingredients in a blender or food processor. Blend until frothy. **I used the food processor and it didn't get frothy, but it did turn out**


Preheat oven to 425f. Pour batter in pan with butter. Bake for 20 minutes...


And voila! Dutch baby!! You can top this with your favorite fruit, powdered sugar, syrup.. the possibilities are endless!

Serve immediately. This beautiful lift will fall soon after removed from the oven.  


I served mine with bananas foster and it was delicious!! 



Here you can see that it fell, but stayed delicious!
